JANET GROENE'S GALLEY RECIPE OF THE MONTH

Almondine Sauce for Grilled Fish

This recipe makes enough for 4 to 6 servings of a thick, firm fish that can be grilled. The sauce also adds color to poached fish.

15-oune can French cut green beans, drained
stick butter
2 tablespoons plus 1 teaspoon flour
1 cup milk
1 tablespoon grated Parmesan cheese
2 tablespoons sherry
Sliced or slivered almonds
Drain green beans and set aside. In a nonstick skillet, melt butter and stir in flour. Stir constantly over low heat while adding meal a little at a time. When mixture thickens, stir in cheese and sherry. Fold in green beans and keep warm.
Spoon sauce over hot grilled or poached fish and sprinkle with almonds.
