JANET GROENE'S GALLEY RECIPE OF THE MONTH

TAKE YOUR CHOICE ON EITHER ONE ... OR TRY BOTH!!!

BLACK BEER BARBECUE
Throw everything in a tightly sealed bag, keep it cold and head for the boat. By the time the stern grill is hot, the chicken or chops will be drenched in flavor.
12-ounce bottle or can of black lager
1 bunch scallions, light sections only, minced
1/4 cup brown sugar
1/4 cup low sodium soy sauce
2 tablespoons minced garlic
6 to 8 meaty, bone-in chicken thighs
Mix lager, sugar, soy sauce and garlic in the bag and add chicken. Seal bag and refrigerate, turning occasionally, for 3 to 24 hours.  Grill chicken in a covered grill over medium-high heat 25 minutes or until it tests done (170 degrees). Discard the bag and marinade or bring the beer mixture it to a boil for five minutes and use it as a sauce.

FLORIDA FETA RICE
What to serve with the meat or fish that’s sizzling on the transom grill? This simple rice side dish adds color and pizzazz to the meal.
cup water
1 chicken bouillon cube
3- to 4-ounce package of baby spinach
2 cups ready-to-serve rice
Small can sliced mushrooms, drained
teaspoon dried, crumbled thyme
4 ounces crumbled feta cheese

In a large saucepan bring the water to a boil. Reduce heat, stir in bouillon to dissolve and add spinach until it wilts. Over low heat, stir in rice, mushrooms and thyme. Heat through, fold in feta and serve. Serves 6.

Bonus recipe: In a bowl, whisk 1/3 cup Key lime juice into a can of sweetened, condensed milk. When it begins to thicken fold in 2 cups ready-to-serve rice and cup dried cranberries. Serve now or chill. Spoon into dessert dishes and serve as is or with whipped cream.
