JANET GROENE'S GALLEY RECIPE OF THE MONTH

Lobster Roll-in-a-Bowl

The lobster can be canned, frozen or left over from last night’s grill.

1 cups cooked, diced lobster

cup ranch dressing

2 tablespoons lemon or lime juice

2 ribs celery, sliced

6 cups torn lettuce

1 cups croutons

Thaw, drain or otherwise prepare diced lobster. In a salad bowl whisk dressing and lemon or lime juice. Fold in lobster, celery and lettuce. Fold in croutons and serve at once. Serves 4.
