Drunken Sailor Rice

 Here’s an easy, one-pot side dish to serve with meat or fish from the grill.

1 can cream of mushroom soup
1/2 soup can water
soup can milk
1 cup quick brown rice (such as Minute Rice)
1 cup frozen mixed vegetables
Small can sliced mushrooms, drained
Small can sliced black olives, drained
2 to 4 tablespoons dry sherry

Put the soup in a saucepan with the water and milk and whisk until combined.  Add mixed vegetables and bring to a boil. Stir in rice, mushrooms and olives. As soon as it comes back to a boil, cover the pan, reduce heat and cook over low heat five minutes or until rice is tender. Stir in sherry to taste and serve at once. Serves 4.
