Eggless Chocolate Cake

For you gunkholers out there, here's a recipe I made often when cruising the most remote islands of the Bahamas for weeks at a time. All ingredients keep in your food lockers without refrigeration. The recipe works in a regular or stove-top oven.

2 cups flour
1 cup sugar
1/2 cup unsweetened cocoa powder
1 tablespoon baking soda
2/3 cup applesauce (open a can or jar)
1/2 cup water
2 tablespoons dry milk
1/2 teaspoon vinegar
2 tablespoons vegetable oil
1 teaspoon instant coffee
1 cup very hot water

Mix dry ingredients in a bowl. Grease a 9 X 13-inch baking pan. Set oven for 350 degrees. Put applesauce in a bowl with the water dry milk, vinegar and oil. Stir instant coffee into hot water and add to the wet mixture. Stir set ingredients into dry until everything is evenly moistened and pour batter into greased pan. Bake 35 minutes or until the cake is firm and springy to the touch.

After the cake cools it can be frosted. It can also be sauced with tinned cream, vanilla pudding, one of the many ice cream syrups or fruit syrups. While hot it can also be topped with marshmallows or shaved chocolate bars. As soon as they melt, spread the goo evenly and let it cool.

Stove-top method: Grease a heavy 12-inch skillet (preferably cast aluminum) and add batter. Cover tightly and bake over low/medium flame until it's springy to the touch and pulls slightly away from edges of the pan. Don't peek too often. The object is to surround the cake with even heat on the bottom, sides and top. Cool and cut in the pan. If you have questions about stove-top baking email me at
