Bacon-Basted BBQ Chicken

Bake it in the oven or slow cooker. This carefree main dish comes out fragrant, juicy and mouth-watering. If also transports well if you want to bake it at home, chill, then nuke it on board to reheat. .

3 cups raw rice
2 large onions, diced
8 portions boneless, skinless chicken breast
Salt, pepper, cinnamon sugar
8 slices bacon
1 Granny Smith apple
16-ounce bottle your favorite barbecue sauce (hot, medium, mild)
4 cups water

Grease a baking pan or slow cooker container and spread rice in an even layer in the bottom.  Stir in onions. Sprinkle chicken lightly with salt and pepper. Cut apple in 8 wedges and top each piece of chicken with a slice. Sprinkle lightly with cinnamon sugar. Wrap bacon around the chicken and apple and fasten with a toothpick.

Place chicken pieces on the bed of rice. Drizzle with barbecue sauce, then the water. Cover and bake 2 hours at 325 degrees or in the slow cooker for 5 to 6 hours on Low or 2 to 3 hours on High.

 Remove chicken pieces to serving plates, stir rice and serve. Serves 8.
